Maso's Low Carb Granola

"Love granola, but trying to reduce carbs and increase good fats. Decided to play with a seed and nut based granola. My wife and I both love this stuff! I love it with berries and plain yogurt. It's like eating desert to me."

  • Preheat the oven to bake at 300 degrees F.
  • Mix all the dry ingredients in a large bowl.
  • Boil the water and melt the coconut oil if you keep it in the refrigerator to liquify.
  • Add the vanilla to the hot water/coconut oil liquid.
  • Pour the hot liquids into the bowl of dry ingredients and make a sticky heavy batter with lots of large chunks of seeds that looks like raw granola.
  • Bake for 2 hours using a spatula or wooden utensil to break apart the clumps of granola and turn them over for even cooking.
  • When the granola looks evenly browned, it's done. Take out of oven and cool on a rack.
  • Treat as a granola, so you can pair with berries and yogurt or use milk as many would do with cereal. Lots of varied flavors with all the seeds.

I've been eating a Mediterranean diet for a long time now, so many of my recipes lean that way. You'll typically find olives, olive oil, nuts and leaner meats in my recipes.
