Mashed Potatoes

- 1 kg potato
- 2 tablespoons butter
- 1⁄4 cup milk (warm)
- 1⁄2 cup cheddar cheese
- 2 tablespoons parmesan cheese
- 1 spring onion
- 30 g ham
- salt and pepper (to taste)
directions
- Peel and cut potatoes into large chunks; place in a pot; cover with cold water; cook over medium heat until tender but still holding their shape.
- While the potatoes are cooking, grate the cheeses, finely slice the spring onion, and chop the ham into small pieces.
- Warm the milk.
- Drain potatoes; return to the stove for a minute or two to dry out the water.
- Mash potatoes; add the butter and warm milk. You should have a smooth thick mixture.
- Add the Cheddar and Parmesan cheeses, spring onion, ham, and salt and pepper to taste; mix well with the potatoes.

Yum! I rarely make mash since I don't particularly like potatoes, but DH loves mash, so this was a treat for him! And a really good treat too!! I made half the recipe, just for us, and I omitted the ham, since we were having bangers 'n' mash, plus onion and mushroom gravy, overall, a real comfort meal and you really made his night, Pat, thank you :) Made for PRMR tag game

These potatoes were simply delicious. I've always had trouble making mashed potatoes. I hate to buy sour cream especially for potatoes since I rarely use it for anything else and hate to throw out the left overs and every other recipe that I've tried seems to call for it. I've tried to 'wing it' in the past but have never gotten the milk/butter/cheese in the proper proportions and something always seems off. I omitted the onions and ham since we didn't have ham and hubby's not a huge fan of onions. Even without those two ingredients, these were just perfect with a little bit of salt and pepper and I know I will be making them over and over and over again. Thanks for a wonderfully simple and delicious recipe!

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
