ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cups navy beans or 3 cups great northern beans, cooked, drained if canned
- 1⁄2 cup maple syrup, pure recommended
- 1 teaspoon dry mustard
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon fresh ground pepper
- 1⁄4 cup tomato paste, mixed with 1 1/4 cup hot water
directions
- Heat the oil in a large skillet over medium heat. Add the onions, cover, and cook until softened, about 5 minutes.
- Add onions, and all remaining ingredients to crockpot, cover, and cook on low for 6-8 hours.

I love making baked beans and this was another good version, a nice no-fuss crock pot method. I made exactly as written, including dried beans, soaked and cooked, and pure maple syrup. I found the amount of liquid was bang on, and I let it cook on low for 6 hours - the beans had the most perfect texture. My young diners really enjoyed this with some simple bread and butter. For my own tastes I found it too sweet, so even though it might sacrifice that lovely maple flavour, I'd be tempted to cut that back a bit next time....but that's just me, as I say the others really liked that sweet aspect.
