Manly Spinach & Rice Casserole

"This is for picky people and manly non spinach eaters, you can add mushroome to it, or sub out the bacon, with ham. Prep time includes cooking the rice."

ingredients

  • 2 cups chicken stock
  • 1 cup long grain rice
  • 1 (10 ounce) package spinach, thawed and squeezed dry (or fresh equivalent)
  • 12 lb cooked bacon, crumbled
  • 1 cup sour cream, onion dip
  • 1 12 cups grated cheese (cheddar or swiss)
  • salt & pepper
  • grating nutmeg

directions

  • Cook rice in stock until tender.
  • Mix rice,spinach, bacon, dip and 1/2 the cheese and seasonings.
  • Place in a 1 1/2 qt casserole that has been sprayed with cooking spray.
  • Top with rest of cheese.
  • Bake 20 -30 min at 350F until cheese is melted.

I am a mother of 5, grandmother of 2. I have been cooking for 45 years and it is still my passion. I am married to a chef. My oldest son is also a chef. All my kids are major foodies. I also must mention the other lover in my life the very hairy, extemely beautiful, totally black cat named Spike; actually he is afraid of his own shadow so we gave him a tough guy name. One of my sons was a soldier in the Canadian military. I pray for all of our children who so bravely defend our way of life. I try to do something kind everyday. It really is nice to be nice. I detest pettiness, two faced people and dishonesty. I try to treat everyone I touch with the same respect I would like. Also I try not to sweat the small stuff.
