  • Place flour in a small bowl.
  • Dredge chicken in the flour to lightly coat.
  • Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear.
  • Set aside, and keep warm.
  • Stir hoisin sauce, red pepper flakes and orange juice into the skillet, and scrape up the browned bits.
  • Let cook for a few minutes until sauce thickens slightly.
  • Return chicken, mandarin oranges, green onions, and cashews, to the skillet.
  • Continue cooking just until all ingredients are heated through.
  • Serve over hot rice.

  1. Geema, this was so much fun to prepare and we enjoyed our dinner so much! Such a nice combination of flavors! I prepared as directed, but next time I make it, I think I will add a touch more orange juice and hosin sauce to make a bit more sauce because it was sooooo good! I served it over rice as you suggested. Thank you for sharing this recipe with us, Geema!
     
  2. Very enjoyable and easy to prepare. I used fresh mandarin oranges rather than canned which were good and very pretty in the dish. I used one whole bunch of green onions, doubled the cashews and used the two to top the dish before serving.
     
  3. This was a nice, quick dish on a busy weeknight. I loved how easily it all came together. I followed earlier reviews and increased the sauce. We had it over jasmine rice with some stir-fried veggies. There was a bit of leftover chicken so will be using it tomorrow to make Mandarin Orange Chicken Salad; great to have multiple ways to use one recipe. Thanks so much for posting! :)
     
  4. Great recipe!! The family loved it. I made extra sauce as suggested by the other reviewer and yes, it was sooooo good. I also added snow peas. This is definetly a keeper. Thanks again for a great recipe.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
