Mama's Angel Hair Pie (Spaghetti Pie) for Two

"This is a nicely scaled down dish for two, can be scaled up too. Using angel hair pasta makes the "crust" special. From TOH. It also freezes well before baking"

  • Cook pasta according to package directions, drain.
  • In a small bowl combine the pasta, egg and parmesan cheese. Press onto the bottom and up the sides of a 7 inch pie plate or shallow 2 cup round baking dish coated with non stick spray. Set aside.
  • Crumble sausage into a small skillet, add onion. Cook until no longer pink, drain. Stir in tomato sauce, sour cream and italian seasoning. Spoon into crust.
  • Bake uncovered at 350 for 15-20 minutes or until heated through. Sprinkle with mozzarella, bake until cheese melts and serve immediately.

  1. Easiest spaghetti pie recipe EVER! Added veggies of spinach, tomatoes, mushrooms, onions and 1/2 lb. of ground beef to the tomato sauce. Mixed it all with 2 tblsp. sour cream and 4 tblsp. cottage cheese and topped it with shredded mozzarella cheese and parsley. Now it's in the oven waiting for my husband to come home from work and we can enjoy it together!

  4. Delicious and quick to prepare. I made this for two, and used MarraMamba's The Simplest Tomato Sauce Ever (Marcella Hazan) 273976. I used chicken and chives sausages, a recent great find from my local butcher. I used low-fat sour cream, but regular cheeses. As long as you're confident about your key ingredients - the sauce and sausage - then you'll love this dish. The only change I made was to add 3 cloves of chopped garlic to the chopped onion. The "crust" was great! Next time I'm making this at a weekend so that I can make a larger quantity in 2 servings lots to add to the freezer. Thanks for sharing this recipe, MarraMamba: we loved it!   2. Made this for 1, 2, 3 Hit Wonders game. DH had been talking about twice-baked spaghetti so thought I'd give this a try. Since we're getting ready to leave for the winter I'm trying to use what is on hand so made some substitutions, i.e., bottled pasta sauce instead of tomatoes and spices. Did not have any sour cream so left out. Sprinkled parmesan on the top with the mozzarella. Only chnage I would make the next time is use Italian sausage instead of bulk sausage. We thought it needed a little more kick. Thanks for sharing!
     
  3. This is a recipe that is fast and easy to make and results in a delicious dinner. It is also very adaptable to what you want to add. I made mine vegetarian (a little different both times) and my favorite was onion, peppers, zucchini, garlic and grape tomatoes, halved. I followed the recipe, just sauting the vegetables instead of the sausage. This is a wonderful recipe that will find it's way on my dinner table many times in the future. I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
