Macadamia French Toast

- 4 eggs
- 2⁄3 cup orange juice
- 1⁄3 cup milk
- 1⁄4 cup sugar
- 1⁄4 teaspoon ground nutmeg
- 1⁄2 teaspoon vanilla extract
- 8 ounces loaf Italian bread, cut in 1 inch slices
- 1⁄3 cup butter, melted
- 1⁄2 cup macadamia nuts, chopped
directions
- Whisk eggs, juice, milk, sugar, nutmeg and vanilla together until well blended. Place bread in a single layer in a tight fitting casserole. Pour the milk mixture over the bread. cover and refrigerate overnight, turning the bread once.
- Preheat the oven to 400°F
- Pour the melted butter on a jelly roll pan and arrange the soaked bread slices in a single layer on the pan. Sprinkle with the macadamia nuts and bake until golden for 20-25 minutes. Serve with warm maple syrup and butter.
- Preparation time does not include overnight fridge time.
