- 3 eggs
- 3 1⁄2 cups sugar
- 3⁄4 cup oil
- 2 cups pumpkin
- 3 1⁄2 cups flour
- 2 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1 1⁄2 teaspoons salt
- 1 1⁄2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄4 teaspoon ginger
directions
- Beat together eggs, sugar, oil, and pumpkin.
- Sift together dry ingredients.
- Mix dry ingredients with egg and pumpkin mixture.
- Using 1/4c size muffin scoop, scoop batter into well greased muffin tin or into paper muffin cups.
- Bake at 350 degrees for 23 minutes.
