- 1 1⁄2 lbs ground turkey
- 1 teaspoon vegetable oil
- 1 small onion, diced
- 2 garlic cloves, minced
- kosher salt
- ground black pepper
- 2 (15 ounce) cans vegetarian baked beans
- 2 teaspoons Worcestershire sauce
- 2 tablespoons brown sugar
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 2 cups biscuit mix (such as Bisquick)
- 1 cup skim milk
- 1⁄2 cup egg substitute (such as Egg Beaters)
- 1 tablespoon honey
- 1 1⁄2 cups shredded low-fat cheddar cheese
directions
- Preheat the oven to 350°F (175°C).
- Crumble the ground turkey into a large skillet over medium heat and season with salt and pepper. When fully browned (5-8 min), transfer to a 13x9 casserole with a slotted spoon.
- Add vegetable oil to pan, then stir in the onion and garlic, and season with salt and pepper. Continue to saute until the onion is tender and translucent, 3-5 minute.
- Stir in the baked beans, Worcestershire sauce, brown sugar, chili powder and oregano. Add to turkey in casserole dish and stir well. Sprinkle 3/4 c shredded Cheddar cheese over the meat and beans.
- In a separate bowl, mix together the baking mix, milk, egg substitute and honey. Pour this mixture evenly over the dish.
- Bake for 40 to 45 minutes in the preheated oven, until the biscuit topping is golden brown. Sprinkle with remaining Cheddar cheese and return to oven for 5 minutes or until cheese is bubbly.
