Lime Chicken Tacos

- 1 1⁄2 lbs boneless skinless chicken breasts
- 4 tablespoons lime juice
- 1 tablespoon chili powder
- 1 cup frozen corn
- 1 cup chunky salsa
- 1 (15 ounce) can black beans, drained
- 8 flour tortillas or 8 corn tortillas
directions
- Place the chicken in the slow cooker. Combine lime juice and chili powder in a bowl, stir to mix. Pour over chicken. Cover and cook on low 5-6 hours (or high 3 hours) or until chicken is tender.
- Remove chicken. Shred chicken and return to slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes (or until heated through). Serve in tortillas.

Didn't have time to use the slow cooker, so I tossed the chicken with chili powder and browned in a little oil. Then I added the lime juice and simmered for 25 minutes. Shredded the chicken and added back to the pan with corn, salsa and beans for another 20 minutes. Also added some cumin, red pepper flakes, and garlic powder, about 1/2 tsp each. Super delicious...can't wait to try it in the crock pot! Thanks so much for sharing!

Yummy and easy! The whole family loves them. I use taco seasoning instead of the chili powder and mine were done in less than 3 hours on low. I added 1 cup of black beans with the salsa and corn and also more lime juice and fresh cilantro. I can't believe how tasty these are with so little effort-love it!
