- 8 ounces whole wheat pasta
- 1⁄2 cup light cream cheese
- 1⁄2 cup 2% low-fat milk
- 1 teaspoon basil
- 6 ounces raw shrimp
- 3 ounces smoked salmon
- 1⁄2 cup parmesan cheese
directions
- Cook pasta, and keep warm.
- In a medium saucepan, melt light cream cheese with milk. Bring to simmer until thickens slightly.
- Add basil. Add shrimp. Cover and cook until shrimp is starting to get a bit pink.
- Dice or julienne smoked salmon. Add to mix. Warm through.
- Add cooked pasta and stir in sauce.
- Add parmesan cheese. Serve hot.

Hi Kiki-kins: I do this al the time. It is delish. If I don't have cream cheese i use light sour cream (Smart Balance has a terrific one out now). I also throw a few chopped veggies ( whatever I have in the fridge) into the pasta water for the last 4-5 mins of cooking (with the pasta). and I have veggies with it as well. I have also used this basic recipe with chicken or Italian sausage. don't forget the sauteed mushrooms and onions. Thanks for posting Judy in WA
