"I clipped this from a Reader's Digest about 3 years ago. It was in an advertisement for Land O Lakes butter. These cookies live up to their name. Lemony and buttery and oh so tender, they almost do melt in your mouth! Prep time includes chill time."

  • In large mixer bowl, combine all cookie ingredients.
  • Beat at low speed, scraping bowl often, until well mixed, about 2 to 3 minutes.
  • Divide dough in half.
  • Shape each half into 8x1-inch roll.
  • Wrap in plastic food wrap.
  • Refrigerate until firm (1 to 2 hours).
  • Heat oven to 350.
  • With sharp knife, cut each half into 1/4-inch slices.
  • Place 2 inches apart on cookie sheets.
  • Bake for 8 to 12 minutes or until set.
  • (Cookies will not brown).
  • Cool completely.
  • In small mixer bowl, combine all frosting ingredients.
  • Beat at medium speed, scraping bowl often, until fluffy (1 to 2 minutes).
  • Frost cooled cookies.

  1. Perfect name for these wonderful lemony cookies! The first batch got slightly brown at the bottom and that was my own mistake...kept them in the oven longer than required. They seemed uncooked and soft so I left them a wee bit longer. But I learnt that they turn crisp after cooling down. The second lot was perfect! I'll be making them again! Thank you for posting the recipe.
     
  2. Very good, they do melt in your mouth, nice looking little cookie. Would get great for serving at a Mother's Day tea or events of that nature. We enjoyed this different little cookie, unique with the lemon. Next time using this recipe to make coconut meltaways. Good dough for a variety of different creations. Thanx for sharing !!
     
  3. These just weren't good at all. They were so bland and tasted almost like plain flour. I won't make thse again. Maybe lemon extract would have made them more flavourful instead of just juice.
     
  4. I also enjoyed these cookies very much. The lemon flavor would make a nice contrast with other cookies in an assortment. As in Honeybeee's case, my first batch was a little dark, but I soon figured out how long to keep them in the oven. The frosting adds flavor, sweetness and moisture, so it is important not to leave it out. Thank you for the recipe, Yooper.
     
  5. these cookies are aewsome, everyone loved them. i did add about 3/4c extra flour to the recipe, this helped to have the cookies to not brake on you has bad. I also doubled the powder sugar to make them a little sweeter.. i did double the cookie recipe also. i did not roll the dough into a log that it stated. i rolled the dough into little balls and pressed my finger into the dough.i did add vanilla to the recipe. cookies did turn out soft. i also added extra lemon juice, my cookies were very lemony. i also added vanilla and extra lemon juice to the icing. i did not cook all of the cookies, i place the rest on the dough that i rolled into balls in a plastic bag to cook for a later date. these cookies do not turn brown when cooking, i cooked mine for about 9mins i think, when u take them out of the oven you will think that they are not done but they are.i will keep this recipe to make again!! i do give these 5 STARS!!
