Glazed Lemon Loaf Cake

"This is a yummy easy to make cake that is great to make especially if you have an abundance of fresh lemons. Every one just loves it. I got it from a friend and have made it heaps."

  • Whisk together oil and caster sugar.
  • Add eggs 1 at a time.
  • Mix in flour, salt, milk and lemon rind.
  • Pour into a greased loaf tin.
  • Bake in a mod oven (180 degrees Celcius) for 45 minutes.
  • Take out of oven and pour topping over.
  • allow to cool in the tin.

  2. I have made this cake lots of times and is so delicious. I made it once with orange in place of lemon, but the lemon is much better and has a stronger flavour. Thx for a yummy recipe that is really easy to make.
     
  3. Very successful recipe. Easy to make and tasty. I love the fact that it uses olive oil instead of butter/marg. etc. I just wish that recipes would be more specific about pan sizes. A loaf tin can be more than one size. But the recipe is great.

  5. Earlier tonight my daughter asked me to make something interesting that she could take to a morning tea at work (she's a talented baker but has been busy). I choose this divine recipe. It is so easy-to-make and wonderfully lemon-y. When I poured over the topping, I thought it might not all soak in, but it did within about 20 minutes. All the family loved it. Assume the daughter's work colleagues will, too. Yummo! Update: My daughter said this loaf was the most talked about item at the morning tea. Everyone was intrigued by the texture (rather like a pound cake) and keen to have the recipe.
