Leftover Pasta Casserole AKa Mexican Pasta Skillet

"I found this recipe in Taste of Home or Quick cooking years ago. This is so easy and a great way to use up any leftover pasta! I usually adjust the ingredients based on how much pasta I need to use up."

  • Brown ground meat with chopped onion.
  • Add cumin and stir to mix.
  • Stir in enchilada sauce and corn.
  • Add leftover pasta.
  • If desired, add 1 Tbsp chopped cilantro to skillet.
  • Cook until mixture is heated through.
  • Garnish with Shredded Mexican-style cheese blend.
