Leftover Pasta Casserole AKa Mexican Pasta Skillet

"I found this recipe in Taste of Home or Quick cooking years ago. This is so easy and a great way to use up any leftover pasta! I usually adjust the ingredients based on how much pasta I need to use up."

• Yields: 6 cups
• Serves: 6

ingredients

• 1 lb ground turkey or 1 lb ground beef
• 1 small onion, chopped
• 2 teaspoons cumin
• 1 (10 ounce) can mild enchilada sauce
• 1 (11 ounce) can corn
• 1 cup cooked pasta

directions

1. Brown ground meat with chopped onion.
2. Add cumin and stir to mix.
3. Stir in enchilada sauce and corn.
4. Add leftover pasta.
5. If desired, add 1 Tbsp chopped cilantro to skillet.
6. Cook until mixture is heated through.
7. Garnish with Shredded Mexican-style cheese blend.
