  • Trim all fat from shanks.
  • Dredge in flour with salt and pepper.
  • Brown in fat in deep frying pan or dutch oven.
  • Combine remaining ingredients and pour over meat.
  • place onions and prunes on top.
  • Cover and bake in a moderate oven (350) for 2 hours or until meat is tender.
  • Serve sauce over shanks.

  1. The flavours of this recipe was really wonderful. I cooked the shanks for about 3 hours on very low heat in the oven (160 C) and they just fell off the bone. Thank you for a very simple and flavoursome recipe!
