- 4 lamb shanks
- 2 tablespoons fat
- 2 teaspoons salt
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon curry powder
- 1⁄4 cup flour
- 1⁄2 cup water
- 1 cup dry sherry
- 2 tablespoons Worcestershire sauce
- 4 tablespoons ketchup
- 4 small onions or 4 small onions, sliced in rings
- 2 tablespoons brown sugar
- 1⁄2 cup raisins
- 8 prunes
directions
- Trim all fat from shanks.
- Dredge in flour with salt and pepper.
- Brown in fat in deep frying pan or dutch oven.
- Combine remaining ingredients and pour over meat.
- place onions and prunes on top.
- Cover and bake in a moderate oven (350) for 2 hours or until meat is tender.
- Serve sauce over shanks.
