Kohlrabi Khol-Slaw With Apples

- 3 good-sized kohlrabi
- 1 -2 carrot (enough to give the slaw some color)
- 1⁄4 cup sugar
- 1 tablespoon cider vinegar (about a Tablespoon or so)
- 1⁄4 - 1⁄2 cup mayonnaise (about 1/4 to 1/2 cup)
- 1 diced apple
- pepper (optional)
directions
- * Shred kohlrabi and carrots and put in a bowl.
- * Sprinkle the sugar on top of the shredded mix, and let it sit at room temp for about an hour. (Sugar can be altered to suit your taste).
- * Add apple, vinegar, and mayo and mix. (additional mayo can be added to make it creamier).
- * Season with pepper if desired.
- * Serve immediately or chill.

We had never had kohlrabi before, but I got some in a CSA box so looked for a way to prepare it that would be similar to something that we already enjoy. This recipe was just the ticket! We all love coleslaw and personally I actually liked the kohlrabi better than cabbage - juicier and better flavored. It probably would have been crisper too, if I had done julienne by hand or even with a food processor, but I used a shredder for ease of preparation. I did cut down the sugar quite a bit - a personal preference. I think the family would have also liked a sweeter slaw.
