Kohlrabi Khol-Slaw With Apples

"A friend of mine makes a coleslaw with shredded bagged coleslaw mix, which is similar to this. Using the kohlrabi makes a little crisper slaw, but it is just as enjoyable."

  • * Shred kohlrabi and carrots and put in a bowl.
  • * Sprinkle the sugar on top of the shredded mix, and let it sit at room temp for about an hour. (Sugar can be altered to suit your taste).
  • * Add apple, vinegar, and mayo and mix. (additional mayo can be added to make it creamier).
  • * Season with pepper if desired.
  • * Serve immediately or chill.

  1. We had never had kohlrabi before, but I got some in a CSA box so looked for a way to prepare it that would be similar to something that we already enjoy. This recipe was just the ticket! We all love coleslaw and personally I actually liked the kohlrabi better than cabbage - juicier and better flavored. It probably would have been crisper too, if I had done julienne by hand or even with a food processor, but I used a shredder for ease of preparation. I did cut down the sugar quite a bit - a personal preference. I think the family would have also liked a sweeter slaw.
