Italian Cutlets

- 1 lb ground beef
- salt and pepper
- 2 tablespoons parsley, chopped
- flour
- 2 eggs, beaten
- 1⁄2 cup breadcrumbs
- 3 slices mozzarella cheese, halved
- 14 ounces tomato sauce
- 1 1⁄2 teaspoons italian seasoning
- 1⁄4 cup parmesan cheese
directions
- Combine ground beef, salt, pepper and parsley.
- Shape into cutlets.
- Dredge in flour.
- Dip in beaten egg.
- Roll in bread crumbs.
- Pan fry in oil until golden.
- Place in baking dish.
- Place mozzarella on each cutlet.
- Cover with sauce.
- Sprinkle with Parmesan cheese and Italian seasoning.
- Bake at 400* for 25 minutes.
