- 3 -4 chicken breasts
- 1 cup lemon juice
- 1 cup orange juice
- 3 tablespoons honey
- 1 cup chicken stock or 1 cup broth
- 2 cups unbleached flour
- 2 tablespoons pepper
- 1 tablespoon salt
directions
- Start by whisking lemon juice, orange juice, honey and chicken stock together.
- Remove any remaining fat from chicken breasts and cut all in half. Place in marinade using covered bowl or plastic bag and leave in refrigerator for approximately 1 hour.
- Meanwhile mix flour, salt, and pepper.
- Place aluminum foil on appropriately sized baking sheet and grease slightly using Pam or regional equivalent. Preheat oven 400 degrees.
- Remove chicken from marinade and place in flour mixture until coated thoroughly. Place coated pieces on baking sheet.
- Using remaining marinade, drizzle over and around chicken breast.
- Bake at 350 for 20-25 minutes until skin is light golden brown and slightly sticky.
