ingredients
- 2 cups fine breadcrumbs
- 1⁄4 cup flour
- 1 tablespoon paprika
- 1⁄2 cup margarine, cold
- 1 tablespoon salt
- 2 teaspoons poultry seasoning
- 1⁄4 teaspoon pepper
directions
- Mix all ingredients.
- Place in small freezer bags and store in freezer.
- To use, roll chicken pieces in mixture. Bake 350 for 1-2 hours.
- Yields enough to cover 2 frying chickens.

This coating mix was very easy to put together and the ingredients I always have on hand. I didnt have any chicken but breaded a pork sirloin chop and fried it in a bit of olive oil. It browned beautifully and the coating stayed on the chop nicely. Did get some of the crispier coating off the chop and it was a bit on the bland side. This would be great as a base recipe to add extra spices too and personalize to your tastes.Reply
