Herb Salad Dressing Claudio's

"This is from Bon Apetite from 1981 - You Asked For It. It's the house dressing for Claudio's restaurant, a place that may not be around anymore. I saw the ingredient of spinach and knew I had to try it. The only other dressing that has spinach in it that I know of is Muriel Hemmingway's spinach salad dressing. I'm substituting safflower with grape seed oil and parsley with cilantro."

  • In a blender or food processor fitted with the steel blade blend in all ingredients except oil.
  • With motor running add 1 cup plus 2 tablespoons each of olive oil and the safflower oil in a stream.
  • Blend until mixture is smooth and thick.
  • If the dressing separates, beat it gradually into a large egg yolk. Makes about 3 1/4 cups.
