- 2 cups loosely packed spinach
- 1 cup loosely packed fresh parsley leaves
- 1⁄3 - 1⁄2 cup cider vinegar (or to taste)
- 1⁄2 cup loosely packed fresh basil leaf
- 1⁄4 avocado, peeled and chopped
- 6 garlic cloves
- 1 1⁄2 tablespoons lemon juice
- 1 1⁄2 teaspoons salt and pepper (each or to taste)
- 1⁄2 teaspoon ground cumin
- 1 pinch cayenne
- 1 cup olive oil (plus 2 tbls)
- 1 cup safflower oil (plus 2 tbls)
directions
- In a blender or food processor fitted with the steel blade blend in all ingredients except oil.
- With motor running add 1 cup plus 2 tablespoons each of olive oil and the safflower oil in a stream.
- Blend until mixture is smooth and thick.
- If the dressing separates, beat it gradually into a large egg yolk. Makes about 3 1/4 cups.
