Hearty Spinach & White Bean Vegetable Soup

- 15 ounces cannellini beans (drained and rinsed)
- 28 ounces diced tomatoes
- 10 ounces Baby Spinach
- 1 onion, finely chopped
- 2 stalks celery, finely chopped
- 1⁄2 cup shredded carrot
- 2 garlic cloves, minced
- 4 cups vegetable stock
- 10 ounces frozen corn kernels
- 1 tablespoon dried basil
- 1 teaspoon dried oregano
- 1⁄4 cup finely chopped fresh parsley
- 2 bay leaves
directions
- Place all of the ingredients in your crock pot. Cover and cook on high for 4-5 hours (depending on your cooker).
- Can add a pinch to 1/2 teaspoon of crushed red pepper as well, depending upon your taste.
- Remove bay leaves before serving.
