- 1⁄3 cup honey
- 1⁄4 cup coconut oil, melted
- 1⁄2 cup peanut butter
- 1⁄4 cup unsweetened cocoa powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon vanilla
- 3⁄4 cup old fashioned oats
- 1⁄3 cup unsweetened dried shredded coconut
- 1⁄4 cup chopped dried cherries, blueberries, raisins or 1/4 cup chocolate chips
- 2 tablespoons ground flax seeds

- Melt your honey, coconut oil and peanut butter together.
- Stir in the vanilla, salt, cocoa powder and oats (either old fashioned or quick-cooking is fine.).
- Add remaining ingredients. I typically use ground flax seeds and a generous amount of chopped dried cherries. The rest of the ingredients are options!
- Line a baking sheet with wax paper. Use a small scoop and shape your cookies close together on the wax paper.
- Chill at least 30 minutes.
- Store in a sealed container in the refrigerator and serve cold.
- I usually make a double batch. they keep a LONG time in a sealed box in the fridge. Separate layers with wax paper. Enjoy!
