ingredients
- 1⁄2 cup butter or 1/2 cup margarine
- 1⁄2 cup low-fat yogurt
- 1 cup brown sugar
- 1⁄2 cup sucanat
- 2 eggs
- 1 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 3 cups oats
- 1 cup dried cranberries
- 1 cup chopped dried apricot
- 1 cup sweetened flaked coconut
- 1 cup chopped walnuts
directions
- Preheat oven to 350 degrees.
- Beat butter, yogurt, sugar and sucanat together.
- Mix in eggs.
- Slowly add flours, and baking soda.
- By hand mix in remaining ingredients.
- Drop by rounded tablespoon onto ungreased cookie sheet.
- Bake 11-12 minutes.
- Remove from sheet promptly and let cool on cookie rack.
