Healthy Carrot Soup

- 2 lbs carrots, chopped
- 2 lbs onions, chopped
- 1 bulb of garlic, cloves peeled
- 4 sticks celery, chopped
- 1 -2 red sweet pepper, roasted, skinned and de-seeded
- 12 cups vegetable stock, well seasoned
- 2 bay leaves
directions
- Place all ingredients into a large soup kettle. Cover and bring to a boil over high heat, then turn down the heat and simmer until all the vegetables are soft, usually about 30 minutes.
- Puree, using whatever method is most convenient for you ( I use an immersion blender).
- Check and adjust seasoning.
- Serve, garnished with your choice of croutons, a swirl of sour cream or yogurt, chopped parsley or cilantro, or whatever else takes your fancy.
