  • Place all ingredients into a large soup kettle. Cover and bring to a boil over high heat, then turn down the heat and simmer until all the vegetables are soft, usually about 30 minutes.
  • Puree, using whatever method is most convenient for you ( I use an immersion blender).
  • Check and adjust seasoning.
  • Serve, garnished with your choice of croutons, a swirl of sour cream or yogurt, chopped parsley or cilantro, or whatever else takes your fancy.
