  • Cut potatoes in half, (you may want to quarter depending on the size of the potato) and cook in boiling water. Strain and cool potatoes under cold water and mix in the chopped green onions and celery. Toss with red wine vinegar and oil, (2 parts oil to 1 part red wine vinegar or to taste). Salt and pepper as needed.

  1. I searched for a recipe to find a healthy meal, and I found this! The red wine vinegar tasted great. It is a healthy, light combination. Will be making again. The only thing I would do differently is chop the potatoes into bite sized pieces. Thanks for the recipe!
