- 3⁄4 cup pineapple juice
- 1 egg
- 1⁄4 cup milk
- 4 tablespoons butter
- 1 teaspoon coconut extract
- 1⁄4 teaspoon ground ginger
- 1⁄3 cup sugar
- 1⁄2 cup potato flakes
- 3 cups bread flour
- 1 tablespoon vital gluten (optional)
- 1 1⁄2 teaspoons fast rising yeast
directions
- Place ingredients into pan in the order recommended by your ABM.
- Use settings for sweet bread or light crust if your machine has them.

As suggested by other reviewers I added 1 t. of salt. I elected to bake in the oven after using the dough cycle of the bread machine for mixing. The bread was smooth, baked beautifully, and easy to work with. (I braided the dough.) I didn't much care for the coconut extract. I found it overpowering & if making the recipe again I would at least cut the amount in half if not exclude it entirely. Thank you for sharing the recipe. I'm glad I tried it.

Really tasty! Making this loaf was quite the adventure. My electricity went out just before the loaf started baking, so I pulled it out to rise in a loafpan, loaded the kids and bread dough in the car to go bake elsewhere. On the way, one child stuck his hand into the dough, apparently pretty far, pushing the plastic wrap deep into the pan. I almost tossed it then, but have been wanting to try this recipe for sometime so continued on my quest to get it baked. Finally found an oven. The result was delicious and beautiful. It must be a very forgiving recipe! I made as directed with gluten and will add a bit of salt next time or serve with salted butter. Really wonderful despite my misadventure. Thanks, Judy!

If you love pineapple and coconut you'll love this light and deliciously flavored sweet bread. It made up beautifully without the gluten which I did not have on hand. Used the sweet setting as suggested and it made for a lovely loaf of bread. The only thing I will change next time is I will add a little salt when serving this bread to those who are not used to low salt cooking as we are.Have added this recipe to my regular family cookbook! Thank you for posting this recipe that we all enjoyed!
