- 8 slices cooked bacon
- 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
- 1 (1 ounce) package hollandaise sauce (Prepare according to package)
- 1 (10 ounce) package frozen chopped spinach
- 4 eggs (poached)
- 1 bunch green onion (cut into 1/2 inch)
- 2 teaspoons salt
- 1⁄4 cup vegetable oil
- 1 (15 ounce) can asparagus
- 2 tablespoons lemon juice
directions
- Saute green onion in 1/4 cup vegetable oil in shallow pan. Add thawed spinach and sauté until tender. Add 2 tablespoons lemon juice and salt. Set aside spinach mixture.
- Divide cooked Home Style hash brown into 4 serving plates. Top it with spinach mixture.
- Place 1 poached egg on top of spinach mixture.
- Place 2 pieces of cooked bacon on the side.
- Pour Knorr Hollandaise sauce on top.
- Garnish with asparagus and serve.
