ingredients
- 1⁄4 cup brown sugar
- 1 cup sugar
- 2 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄3 cup melted butter
- 1 egg
- 1 cup milk
- 1 apple, peeled and finely chopped
directions
- combine first 6 ingredients in a large bowl and mix well.
- stir in the liquids and then the chopped apple.
- spoon into greased muffin tin about 2/3 full.
- bake at 400-f for 20-25 minutes.

i had to use skim milk but i did use real homemade butter. i also used 1 3/4 large gala apples since i'm of the opinion that fruit muffins should contain **FRUIT!** and not just fruit. everything else i went by the recipe. this filled 12 muffin tins to a little overflowing but i like it that way since it means nice full fluffy muffins. these didn't expand as much as i was expecting but they were still a good size and not overly sweet. i think they would have been better with granny smith apples or another tart, sturdy type and maybe a bit more cinnamon but these were really tasty. more summery tasting than fallish but that's ok. might taste more like fall if i added a bit of cloves and nutmeg for depth. thanks!

I was looking for a good muffin recipe to use some very ripe apples with...so quick and easy to make, I read the comments and adjusted to 1/2 cup of white sugar instead of 1, and 1/2 teaspoon cinnamon, plus added two apples chopped...they are delicious! As an apple orchard owner, these are the best apple muffins I have made yet! Yummy :-)
