- 6 -7 medium red potatoes
- 1⁄3 cup green onion, minced
- 1⁄4 cup butter
- 2 cups cheddar cheese, shredded
- 1 1⁄2 cups sour cream
- 1 teaspoon salt
- pepper
directions
- Boil potatoes in skins. Cool, peel and grate.
- In a saucepan, saute onion in butter.
- Add cheese and cook until cheese melts.
- Remove from heat and add sour cream, salt and pepper.
- Fold this mixture into potatoes and empty into a buttered 2 quart casserole dish.
- Bake at 325 degrees Fahrenheit for 30 minutes.
