  • Boil potatoes in skins. Cool, peel and grate.
  • In a saucepan, saute onion in butter.
  • Add cheese and cook until cheese melts.
  • Remove from heat and add sour cream, salt and pepper.
  • Fold this mixture into potatoes and empty into a buttered 2 quart casserole dish.
  • Bake at 325 degrees Fahrenheit for 30 minutes.
