  • 1 basic pizza dough
  • 1 cup asparagus, trimmed and cut into 1 inch pieces
  • 3 tablespoons olive oil
  • 1 (798 ml) can seasoned diced tomatoes
  • 12 cup genoa salami, slivered
  • 1 cup goat cheese, crumbled
  • 14 teaspoon chili flakes (optional)
  • cornmeal

directions

  • Preheat oven to 450F and sprinkle a baking sheet with cornmeal.
  • Roll out dough to desired thickness and lay on baking sheet.
  • Drain the tomatoes and spread evenly over the dough. Toss asparagus with olive oil; spread on tomatoes. Top with salami.
  • Bake for 5 minutes, then remove from oven and sprinkle with goat cheese (and chili flakes). Return pizza to oven for 8-10 minutes or until lightly browned and cheese has melted.

Why "SoupCookie"? My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
