  • Preheat oven to 350°F Grease a 9x5 loaf pan.
  • Sift together flours, baking powder, ground ginger, baking soda, salt, and spices.
  • Whisk together milk, molasses, oil, applesauce, eggs, brown sugar, and grated ginger (if using).
  • Fold liquid mixture together with flour mixture, taking care not to over-mix.
  • Pour batter into prepared pan. Bake for about 1 hour.

  1. Hi, thanks so much for sharing this recipe. I loved the combo of seasonings it asked for--I upped the cinnamon to 3/4 tsp but kept the other amounts the same. At first I used melted butter for the applesauce/oil--but my neighbor (who was kind enough to try it for me) said it was a bit crumbly but the flavor was great. So I baked for a friend & made it as written--and reduced the cooking time by about 5 minutes. I removed the bread right away once it was done cooking. I was also more careful not to over mix the batter as instructed. I have not gotten feedback from my friend but I think it's improving for sure! UPDATE: after making this a few more times--I reduced the baking time by 5 more minutes & upped the oil AND applesauce amount to 1/3 cup. I got comments that it was still slightly dry but the flavor was wonderful. I think adding extra liquid & reducing the baking time (again) should hopefully do the trick!
