Garlicky Coleslaw

ingredients
- 2 garlic cloves, minced
- 1⁄2 cup olive oil
- 1 tablespoon white wine vinegar
- 2 lemons, juice and zest of
- 1 orange, juice and zest of
- salt (to season)
- pepper (to season)
- 1 small green cabbage, finely chopped
- 1 small red onion, finely chopped
- 1 cup watercress, stems removed and finely chopped
directions
- In a small mixing bowl add minced garlic, olive oil, vinegar, and also the zest and juice of the lemons and orange. Set aside dressing.
- Place finely chopped cabbage, onion, and watercress in large mixing bowl. Pour half of the dressing over coleslaw, season with salt and pepper, and toss well to coat. Add more dressing as desired.

oh my where was this recipe hiding up till now, I absolutely LOVE this coleslaw, I just made it and I'm going to let it chill for 24 hours if it lasts that long lol! I cannot believe I did not review this recipe! I lived off this salad last summer. I absolutely adore cabbage, and abhor mayo. I had searched high and low to find a coleslaw without any, and this was the winner through and through. I made it about every other week and ate it as a side with my lunch until it was gone. It is SO refreshing and crunchy. By Summers end I had made my own adjustments, little do I remember what they were, nor does it matter as this is fantastic from the get go.
