- 1 1⁄2 cups quinoa, dry
- 1⁄2 cup scallion, chopped
- 1⁄3 cup dried cranberries
- 1⁄3 cup raisins
- 1⁄3 cup dried apricot, chopped
- 1⁄3 cup pecans, chopped
- 1 (14 ounce) can crushed pineapple, unsweetened
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 2 tablespoons fresh basil, finely chopped
- 1 teaspoon sea salt
- 1⁄2 teaspoon lemon zest
- 1⁄2 teaspoon orange zest
- 2 1⁄2 cups water
directions
- In a saucepan, combine water with quinoa and sea salt. Bring to a boil. Reduce heat, cover and simmer 10-15 minutes until liquid is absorbed. Remove from heat, cool to near room temperature.
- In a large bowl, mix quinoa with all other ingredients. Do not drain the pineapple--the juice is an essential ingredient!
- Cover and chill in refrigerator overnight. Serve cold.
