Fruit Chewy Cookies With No Added Sugar

- 2 bananas, frozen
- 2 egg whites
- 1 cup dates, chopped or ground
- 1⁄2 cup raisins
- 1 1⁄2 cups rolled oats (I used quick cooking)
- 1 tablespoon cocoa powder (optional)
directions
- Preheat the oven to 350 degrees.
- Defrost the bananas so they are soft and mash them in a bowl, leaving some little chunks.
- Into the bowl add the egg whites and mix well.
- Then add the dates and the raisins and mix well or until the fruit is coated with the egg mixture.
- Add the oatmeal and the cocoa powder if you are using it.
- Let the bowl sit for 10 minutes or until the oatmeal absorbs all the liquid.
- Spray baking pans with cooking spray.
- Using 2 teaspoons, spoon the mixture onto the baking pan.
- With the back of one of the spoons, smush the mixture down so it is somewhat flat.
- Bake the cookies for 20-25 minutes or until the edges are getting golden brown.
- Remove the cookies to a cooling rack.

I have made this recipe 3 times now. Each time a little different. This time I didn't scoop the cookies onto a baking sheet. Instead I poured the entire batter into a greased 9x13 glass baking dish. Baked for 20-25 minutes, removed from oven and let cool. I then proceeded to cut them into squares. Much easier than making the individual cookies. These have become my husbands favorite healthy alternative.

these cookies are one of my favorite go to's! The options are really endless. I used dried cranberries instead of dates, but almost any dried chopped fruit would work. To lower the carbohydrate factor, i used a combo of oats and puffed brown rice cereal (easy to find near the natural cerals- even at wal-mart!). everytime i make these, they dissappear!

Excellent cookies! I will make these many times. I didn't have a cup of fresh dates, so I used a cup of dried dates. I put in the cocoa powder, but I couldn't really detect the taste. Then again, I haven't tried the cookies yet without the cocoa powder. The only problem with these cookies is that I can't stop eating them because they taste so good. This is a healthy and tasty recipe that everyone should know about.
