Frozen Peanut Toaster Slices

- 1 3⁄4 cups flour
- 1⁄2 cup sugar
- 3 tablespoons baking powder
- 1⁄2 teaspoon salt (optional)
- 3⁄4 cup peanut butter (smooth or crunchy)
- 3⁄4 cup milk
- 2 eggs, beaten
directions
- Grease or line a 9x5x3 inch (1lb) loaf tin and set it aside.
- In a bowl, sift flour, sugar, baking powder, and salt (if using).
- Add the peanut butter and rub in with your fingers as if making pastry, until it resembles crumbs.
- Add the milk and eggs; stir just until the mixture is well combined but do not overbeat.
- Turn the mixture into the loaf tin.
- Bake at 180c/350f for 40-45 minutes.
- Check to see if cooked by inserting a knife in the centre - it should come out clean.
- Remove from tin and put on a rack to cool.
- When cool slice into 3/4 inch slices and either toast, or, if freezing stack the slices with a small sheet of greaseproof paper between each slice.
