Fresh Rhubarb Pie

Ready In:




  • Preheat oven to 450 degrees F.
  • Combine sugar and flour.
  • Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture.
  • Sprinkle with remaining sugar and flour.
  • Dot with small pieces of butter. Cover with top crust.
  • Place pie on lowest rack in oven.
  • Bake for 15 minutes.
  • Reduce oven temperature to 350 degrees F, and continue baking for 40 to 45 minutes.
  • Serve warm or cold.

  1. This simple rhubarb pie recipe is exactly how I make it. I have to buy fresh rhubarb from the store and freeze it. Rhubarb does not grow here in the southwest. I’m so glad I stocked up.
  2. I did use the full amount of flour but still ran over.. I'm just curious.. What does the butter do?
  3. I love the pie, although I wish the filling were a bit thifcker. It is very juicy. I thought the flour in the filling was a lot though, so I reduced it to 4 T. Turns out I should have made it as is. However, this pie is just delectable as is so 5 stars since the mistake was mine!
  4. Excellent, even though I didn't follow directions very well and mixed the rhubarb with the sugar and flour before adding it to the pie. Unlike most other pies I make, the filling wasn't too runny.
  5. High marks for simplicity. I've never eaten rhubarb pie before so I didn't know what to expect. It turns out that I really just don't like rhubarb.
