- 2⁄3 cup vegetable oil
- 1⁄4 red wine vinegar
- 1⁄4 cup chopped fresh parsley
- 1⁄4 cup chopped green onion
- 1 minced garlic clove
- 1 teaspoon salt
- 1 teaspoon fresh dill weed
- 1 teaspoon dried basil
- 1⁄4 teaspoon pepper
- 4 -6 large tomatoes
directions
- Except for tomatoes, mix ingredients. Let sit overnight. Two hours prior to serving slice and add tomatoes.

This was a very nice tomato salad with lots of fresh flavor. For my taste, though, this amount of oil diluted the dressing too much. Next time, I would probably start with half as much and adjust from there. Since garden tomatoes are out of season, I used grape tomatoes, which worked well. Since they weren't perfectly sweet, I added a pinch of sugar. This dressing would also be nice over a green salad or pasta salad. The marinated tomatoes would also make a nice topping for bruschetta. Thanks for sharing your grandmother's recipe! I'm sure I'll be making it often when summer tomatoes are abundant. Made for Bargain Basement Tag Game.
