Fresh Green Beans with Garlic

ingredients
- 1 lb fresh green beans
- 2 teaspoons butter or 2 teaspoons olive oil
- 1 small onion, thinly sliced
- 2 cloves garlic, chopped
- 1 tablespoon fresh thyme (or 1/2 tsp dried) or 1 tablespoon oregano (or 1/2 tsp dried)
- salt
- cayenne pepper
- hazelnuts (or your favourite)
directions
- Trim beans, boil for 4 or 5 minutes until tender crisp- Drain In a cast iron fry pan or saucepan, melt butter add onion and garlic and cook over medium low heat.
- Stir occasionslly until onion is just tender Stir in beans, tyme salt and cayenne, Heat through.
- Add nuts just before serving.

Made these for dinner tonight with fresh ingredients from the farmers market. They smelled fantastic while cooking, but we weren't a fan of the thyme. If I made these again I'd try the oregano. Served with grilled chicken and biscuits with homemade preserves.<br/>UPDATE: I made these again tonight using oregano instead of thyme. We all enjoyed them much better this way. We'll use oregano from now on and double the garlic. I increased the star rating based on our new review!

This is the best green bean recipe ever. My son, who hates all vegetables, had 2 servings and then came back to make sure I didn't throw the leftovers away. We had guests over for dinner an they raved about them. I toasted the hazlenuts (350 for 10 minutes)...definitely use hazelnuts. Substituted shallots for onions and used fresh thyme. I never knew how to properly cook fresh green beans until now. This will be a staple recipe for my family. I can honestly say I have never been excited about a vegetable side dish before now.
