Fluffy Cottage Cheese Pancakes Recipe

- 16 ounces small curd cottage cheese
- 1 teaspoon vanilla extract
- 3 tablespoons honey
- 4 large eggs
- 1⁄3 cup regular raisins or 1/3 cup white raisins
- 1 cup flour plus 2 tbsp flour (scoop into measuring cup and level off top)
- 1 teaspoon baking soda
- 2 tablespoons olive oil, for each batch
directions
- In a medium bowl, whisk together 4 large eggs until well beaten. Add cottage cheese, vanilla, and honey and whisk until well combined. Stir in raisins.
- In a separate bowl, whisk together the flour and baking soda. Whisk the flour mixture into your wet ingredients.
- Heat a large skillet over medium-low heat and add oil. Once hot, place heaing tablespoon of pancake batter into the hot oil and saute until golden and puffed up (about 2 minutes per side).
- Serve warm with sour cream, maple syrup, fruit, or jam. I liked just butter on mine.
