- 3 eggs
- 1⁄4 cup plain nonfat yogurt
- 2 tablespoons plain nonfat yogurt
- 1⁄4 cup honey
- 2 tablespoons water
- 1 tablespoon vanilla
- 1 cup flax seed meal
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 2 tablespoons cinnamon
- 1⁄8 teaspoon salt
directions
- Mix wet ingredients.
- Mix dry ingredients. Then combine with wet.
- Let batter stand 5 minutes. Spoon into well-greased muffin cups (don't use paper liners).
- Bake at 350 degrees for 15 minutes. (Store leftovers in fridge.).
