- 1 - 1 1⁄2 lb boneless chicken breast
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1⁄2 teaspoon cayenne pepper
- 1⁄8 teaspoon garlic powder
- 1 large green bell pepper
- 1 large onion
- 1 (2 1/4 ounce) can sliced & pitted black olives, drained
- 1 cup salsa
directions
- Preheat oven to 350°F Lightly spray a 13 X 9 inch baking dish with nonstick spray.
- Combine salt, cumin, oregano, chili powder, cayenne pepper and garlic powder in a small bowl. Mix well.
- Coat chicken breasts (can be flattened for faster cooking if desired, but will need to alter cooking time) with spice mixture, pressing spices in with fingers.
- Place seasoned chicken in baking dish.
- Remove the seeds from the bell pepper. Cut the bell pepper and onion into 2-3 inch strips.
- Arrange the vegetable strips and olives around chicken. Spoon salsa evenly over veggies.
- Bake until chicken is cooked through and juices run clear; ~20-25 minutes.
- Serve with tortillas and rice.

This was indeed tasty...I cut my chicken mixture up and wrapped it in my tortilla with some of the rice in it too..I felt that it was missing sour cream...DH ate his like he does fajitas...taking a bite of each item...I think the main missing component was...heat...I could see adding some slivered jalapenos...that would kick it up a notch...overall a great dish...Made for Spring 2014 PAC...=)
