Fennel With Apples and French Vinaigrette

"I am a huge fennel fan, and just saw this recipe on the Aish.com website. I am hoping to try it soon, but am posting it here so I don't lose it, with a few changes for clarity. Let me know what you think."

  • Cut the leaves off the fennel, and thoroughly clean the stalks and bottom of the bulb. Cut into 1 inch pieces.
  • Peel and cut the apple into thin 1 inch pieces. Add to the fennel.
  • Drizzle with olive oil.
  • In a small bowl, mix the lemon juice, vinegar and mustard. Season with salt and a bit of black pepper to taste. Add to the fennel mixture, mix and serve.
