ingredients
- 1 cup canned pumpkin
- 1 cup applesauce
- 2 egg whites
- 1⁄4 cup skim milk
- 1 cup dried fruit (cranberries or raisins)
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 tablespoon cinnamon
- 1 teaspoon pumpkin pie spice
directions
- Preheat oven to 350 degrees.
- Mix together dry ingredients and set aside.
- Blend together wet ingredients until smooth. Combine well with dry ingredients then add dried fruit.
- Pour into a greased 9x9 baking pan. Bake for around 30 minutes or until toothpick in the center comes out clean.

These bars make nice healthy snack or breakfast and are a nice combo of flavors. Made using un-sweetened apple sauce thus meaning this really was not very sweet at all. Loved how healthy it was till DH decided it was dessert and put whipped topping on it :lol: To get DH to eat without whipped topping next time may add just a bit of sweetener. Recipe did not say what size pan to use so used a 9x13 and they were almost over cooked at 25 minutes, next time will try using a 9x9. Thanks so much for the post.
