Fancy Grilled Cheese

"This is your typical grilled cheese sandwich; until you add Herbs de Provence . This puts it way over the top. Also; you want to use 2 types of cheeses. I have used cheddar, gruyere, havarti, asiago, colby, Italian blend, triple cheddar blends and more. As long as you have a variety; it works really well. If using shredded cheese; substitute 1/4-1/3 cup of shredded cheese for 2 slices of cheese."

  • 2 slices sourdough bread
  • 4 tablespoons butter, softened
  • 2 slices white cheese, any flavor
  • 2 slices yellow cheese, any flavor
  • 1 teaspoon herbes de provence

  • Lay your slices of bread out and lightly spread butter on one side of each.
  • Place all the cheese on one slice of bread. Place the buttered side of the other slice on top of the cheese.
  • Lightly butter the slice of bread showing.
  • Sprinkle half of the herbes de provence on the buttered side.
  • In a medium-hot non-stick pan, lay your sandwich, buttered side down. If it sizzles loudly; the temperature is too hot; lower it.
  • Wait 1 minute; then lightly press the sandwich down. Spread butter over the last exposed slice and sprinkle the remaining herbes de provence on top.
  • Depending on your temperature; your first side should cook in about 4-6 minutes. Check the edges for browning. Then flip it over and cook the 2nd side for approximately the same amount of time.
  • More or less cheese can be used depending on your preference. You can also melt a tablespoon of butter in the pan to help prevent sticking.
