- 1 tablespoon milk
- 1 cup milk
- 3 haddock fillets
- 3⁄4 cup fine dry breadcrumb
- 1⁄4 cup parmesan cheese
- 1⁄4 teaspoon thyme
- 1⁄4 cup butter
- 1⁄2 teaspoon paprika
directions
- Preheat oven to 525 degrees.
- Add salt to milk.
- Cut filets into serving pieces, dip into milk, then in the bread crumbs, cheese and thyme.
- Arrange fish in well-greased dish and pour butter over evenly.
- Bake on top rack 12 minutes.
- Garnish with paprika.
- Serve with lemon slices.

This was really good! I shouldn't give a star rating since I skipped the thyme and paprika bc I was using the fish for fish tacos and wanted to keep it simple. It is a great alternative to fried and my DH agreed it was very light and flaky. I must admit I have never even turned up my oven that high before, but it worked out wonderfully (though my smoke alarm did off once). I will definitely make this again and probably try using panko crumbs in place of breadcrumbs.
