Easy Weeknight Chili

"This recipe takes no time and is perfect in a bowl or on a taco shell. Using salsa is perfect because it will add the peppers, onions, and tomatoes to make this chili hearty and spicy. When I first heard this recipe I didn't think it would come out good... but it is perfect for the middle of the week because it only takes a few minutes to prepare and it. Serve with some shredded cheese and serve with some Jiffy cornbread (perfect at .33 a box!). Note: The ingredients are not extremely specific; a 10 oz. can instead of an 8 oz. can will work fine, etc. Chili beans or corn can be omitted if desired."

  • 16 ounces refried beans
  • 26 ounces salsa (use mild, medium, or hot depending on preference)
  • 15 ounces sweet corn
  • 15 ounces chili beans
  • 1 12 lbs ground beef

  • Brown the chop meat in a pan and drain in a strainer.
  • In a medium/large pot combine meat with the salsa, refried beans, sweet corn, and chili beans.
  • Heat on low/medium for 5-7 min then serve.

  1. I always throw this is in the crockpot and let it cook on low around 8 hours. This is so simple but has all the taste of a more labor intensive chili. We have this often.
