Easy Oatmeal Raisin Cookies

4 dozen


  • 1 (18 ounce) box 2 layer spice cake mix
  • 4 egg whites
  • 1 cup uncooked quick-cooking oats
  • 12 cup vegetable oil
  • 12 cup raisins


  • Preheat oven to 350.
  • Line cookie sheets with parchment paper.
  • Combine cake mix, egg whites, oats and oil in a large bowl.
  • Beat at low speed until well blended.
  • Stir in raisins.
  • Drop by rounded teaspoonfuls onto cookie sheets.
  • Bake 7-9 minutes until lightly browned.
  • Cool on sheets 1 minute.
  • Remove and cool completely.

  1. Not bad. I used German Chocolate Cake mix because that is what I had on hand. I also used 2 whole eggs instead of 4 egg whites. Quick and easy recipe, but needed a bit of sugar added, otherwise kind of bland. Could have been because of the mix I used. Great starter recipe to modify as needed. Thank you for posting.
  2. Sorry to be the voice of dissent: I found these cookies to be rather doughy and too spicy. I like the convenience of starting out with a cake mix, but maybe that was the problem: I like my oatmeal cookies crispier.
  3. These are really good! I used 2 whole eggs, and instead of raisins, I used butterscotch and chocolate chips. I just mixed by hand, and got 2 1/2 dozen, which took a little longer to bake. Thank-you!
  4. This is one of the better doctored cake mix cookie recipes I've tried. They aren't too sweet or greasy like some of the other cake mix cookie recipes, and the spice flavor is yummy. These do not brown much, so watch them carefully. (If you wait for them to "look" done, they'll be overdone.) This is a nice change of pace from other oatmeal cookie recipes. Thank you for posting it!
  5. This made beautiful, tasty cookies. As Rita said, they kept their shape and did not flatten. I was out of raisins so substituted an equal amount of currants, and I used 2 whole eggs in place of the 4 egg whites. I also made the cookies a bit bigger (I got 2.5 dozen), so I gave them about 13 minutes in the oven. Other than that I followed the recipe exactly. I will definately make these again.

It would most likely be made again, many times! <br /> <br />4 STARS....This recipe was good, we liked it but I made changes either in taste or it was not clear in something, but I would consider making it again. <br /> <br />3 STARS....This recipe was not something that got approval from the majority. Either it just didnt work in preparation, directions, or taste. My collection numbers well over 2000 and where as some people go to bed with a good novel, my nightstand is full of cookbooks! <br /> <br />I love to bake and its nothing for me to make 15-20 different kinds of cookies and candies for the holidays. I guess that it has rubbed off on my oldest daughter who is a culinary school graduate and knee deep in pastry classes, hoping to become a pastry chef! <br /> <br />In March of 2002 I had gastric bypass, weight loss surgery and I have lost 125 pounds FOREVER, so now when I do cook it IS for everyone else to enjoy. <br /> <br />I love Zaar and all the friends I have made here, this sight is so addictive but yet so much fun! I know that in the years since Ive been a permanent fixture of this site I have acquired many great recipes and tons of cooks that I am proud to call my friends!
