Easy Fried Potatoes & Onions

ingredients

  • 1 large onion, peeled and thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 potatoes (baked or boiled and cooled)
  • salt and pepper

directions

  • Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
  • Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
  • Return the onion to the pan, toss and season. Serve warm.

I was only going to give this recipe 4 stars since it didn't specify at what heat to cook the onions (or the potatoes, for that matter), so I had to find another recipe to go by for that part of the process. However, I didn't want to ruin the perfect 5-star score for something that trivial, especially since the recipe in itself is delicious and deserves 5 stars. But it would be helpful if you could add the heat settings to your recipe so kitchen-challenged people like me don't end up in a panic!
     
  3. These were good and easy to make. I followed the recipe as written other then I used season salt instead of regular salt. We all enjoyed them.
     
  4. What a delightful treat! I scaled it down to serve 1 and really enjoyed this method of frying potatoes and onions. I used leftover red potatoes that were boiled with the skin on. I'll be making my fried potatoes this way from now on. Thanks for sharing! Made for Spring PAC 2012.
     
  5. Excellent potatoes! I cooked my potatoes in the microwave earlier in the day, so this was a breeze to prepare. I really browned mine because we like our potatoes crispy. Great recipe!
