- 2 cups seasoned rotisserie chicken
- 1 (10 1/2 ounce) can cream of mushroom soup, undiluted
- 1⁄3 cup diced red bell pepper
- 1⁄4 cup diced onion
- 1⁄3 cup finely shredded fresh parmesan cheese
directions
- Preheat over to 350 degrees.
- Debone chicken, tearing it into bite size pieces and place in 9 X 9 baking dish.
- Mix soup, red pepper, and onion in separate bowl.
- Add soup mixture to chicken, mixing well.
- Bake for 30 minutes or until bubbly. Sprinkle Parmesan cheese over top the last 5 minutes.
- Serve over toast or rice.

Mother of four grown children, my husband owned an Italian Restaurant for 35 years. When he came home, he wanted something else than the food he looked at all day. He loved casseroles.
