Double Apple Squares

"This is a recipe that I found in my Mom's binder, and thought I'd share it with you - Happy Cooking!!"

ingredients

• 1 1⁄4 cups applesauce
• 1 cup all-bran cereal, 100%
• 1⁄2 cup butter or 1/2 cup margarine, softened
• 3⁄4 cup brown sugar, firmly packed
• 1 egg
• 2 cups flour
• 1 teaspoon cinnamon
• 1 teaspoon baking powder
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon nutmeg
• 1⁄4 teaspoon salt
• 1 medium apple, unpeeled, shredded
• 1 cup pecans, chopped, divided
• 2 tablespoons brown sugar

directions

1. Combine applesauce and cereal. Set aside.
2. Cream butter and brown sugar, until light and fluffy. Beat in egg.
3. Blend in flour, cinnamon, baking powder, baking soda, nutmeg, salt and cereal mix. beating until smooth.
4. Stir in apple and 1/2 cup pecans.
5. Spread evenly in 13x9 pan. Combine remaining ingredients (1/2 cup pecans and 2 tablespoons brown sugar). Sprinkle over top.
6. Bake at 375F for about 30 minutes.
7. Cool on rack. Cut into bars.
